Cloud’s Meats have been custom processing beef and pork for the people of southwest Missouri since 1959. You can have your animal processed by the most experienced staff in the area in a clean and modern processing facility. Your meat will be processed, and packaged according to your specifications and family size. Our highly trained staff will process your animal to maximize your return of usable cuts. When processing your hog, we can produce the same hickory smoked and cured products available in our retail area, from your animal.
Aging your beef is a personal preference. The standard hang at Cloud’s is cutting the carcass on the 8th day where most of tenderness benefits are achieved. While hanging past this time can increase the tenderness slightly, longer hangs can change the flavor of the beef. If this is a flavor you desire, Cloud’s can accommodate. There are some drawbacks to aging. Higher bacterial loads from the aging will cause a shortening of the freezer life of the meat and off flavors in the burger. Because of these problems Cloud’s has developed an aging system to improve these problems. For a small fee, we will cut your beef on the 8th day keeping the burger and roasts fresh and set back the loin primal to age as long as you would like. You will get the best of both worlds!
Keep in mind, not all beef carcasses can be aged. The carcass must have enough cover fat to protect the lean meat from bacteria. We will be happy to discuss if your animal can age or not.
Steps in getting an animal Custom Processed
- We process by appointment only. Call to schedule your animal. We generally are booked two to three week out, and possibly longer during the winter months. Please plan ahead. We do not kill during most of November for deer season.
- You may bring your animal in the evening before your scheduled slaughter day or by 8:00 AM the day of, unless special arrangements are made.
- Call with cutting instructions within 24 hours of drop off. A Cloud’s customer representative will walk you through your cutting instructions to best suit your needs.
- You will be called when your animal is ready to be picked-up.
